We borrowed and twisted many of these techniques to produce Doc's Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers.
Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc's Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Michter's US*1 Single Barrel Straight Rye Whiskey is made from a mash comprised primarily of fresh, plump rye grains. Once the grains are harvested, they are sheared so that during fermentation, the grains are saturated with more flavor. After the grains have been fermented, they are distilled through a copper-pot still before being matured in charred, American oak barrels. The barrels are allowed to rest in a heat-cycled warehouse, which forces the wood to expand and contract as the temperature rises and falls. The original brainchild for our product line, the Dorado required that we learn how to malt barley. Born out of barbecuing with the mesquite scraps from Arroyo Design while drinking Scotch, we had the idea to malt over mesquite instead of peat. We wanted to create a product that was a true reflection of the Sonoran Desert. To achieve that, we dry our malt over a mesquite fire using the species Prosopis Velutina, the predominant species in Southern Arizona.

The golden amber spirit has aromas of oak, dark fruits and mellow vanilla. Take a sip for an instant hit of cherry on your tongue. The taste moves toward nuts, toffee and spice, plus some more fruit. It finishes dry and chewy with lasting notes of maple and oak. At 90 proof, Bulleit Rye is still very smooth on the palate with no discernable burn outside the peppery spice. Pale Amber NOSE Fresh sherry embracesthe maltier, more honeyed aspects of Dalwhinnie. Peaty and surprisingly, still heathery. Spicy yet grapy. BODY Light to Medium PALATE A big, spicy buzz followed by an impressive build up of very clear, well defined malt. After a quick burst of sweetness, a rich, grape effect moves in towards the middle.
